Adreana s Greek Pasta Salad

Cook chicken in water to cover with 1 bay leaf. Bring to boil and cook for 30 min. or until juices run clear. Cool and remove skins. Or, you can cook chicken in frying pan until cooked through. Cut into bite size pieces. Cook noodles and drain. Add all ingredients and mix well. I use only about half the bottle of dressing and then put the rest on the table if someone wants more. Serve warm or cold. Serves 6

Aegean Artichoke and Penne Pasta

1. Cut stems off artichokes. Peel off tough outer leaves to reveal yellow-green hearts. Cut artichokes into quarters. Combine 1/4 cup lemon juice with 2 cups water in a medium bowl. Add artichokes to lemon water and toss to prevent discoloration. Drain. Steam artichokes until tender, about 20 minutes. chill.
2. In a large pot, bring 2 quarts water to a rapid boil. Add 1 teaspoon salt and penne. Cook penne until al dente, about 10 minutes. Drain and rinse with cold water.
3. To make salad dressing: combine tomato juice, olive oil, lemon juice, garlic, parsley, basil, salt and pepper in a food processor or blender and puree for 30 seconds.
4. Toss together artichokes, penne, capers, olives and feta cheese in a large bowl salad bowl. Pour dressing over and toss well.

Alaska Salmon and Avocado Pasta

Cook the pasta according to package directions. Drain and toss with the French dressing. Allow to cool. Drain and flake the salmon. Add to the pasta with the green onions, sliced bell pepper and cilantro. Whisk together the lime juice and grated rind, the mayonnaise, sour cream and tomato paste until thoroughly combined. Toss the pasta salad with the dressing. Season to taste with salt and pepper; cover and chill. Before serving, gently toss the avocados into the salad. Spoon the salad onto a bed of lettuce leaves. Sprinkle with paprika for garnish.

Aloha Pasta Salad

Rinse pasta and set aside. Steam peas and broccoli together until tender, about 4 minutes. Allow vegetables to cool. In large bowl mix together pasta, broccoli, peas, pineapple, onion, and celery. In small bowl combine mustard, red onion, vinegar and oil. Whisk together to combine. Pour dressing over pasta, stirring gently to combine. Serve chilled.

American Pasta Salad

In a large pot of boiling water, cook oasta until tender. Meanwhile, in a large bowl, blend the mayonnaise, parmesan cheese, vinegar, oregano, thyme, salt, pe pper, and garlic powder. Drain and rinse pasta and add to the mayonnaise mixture; mix well . Add the chopped eggs, mozzarella cheese, red pepper, and scallions. Mix just until combined. Serve immediately, or cover and chill for serveral hours or overnight to blend flavors.
NOTES : Add some diced salami or pepperoni and the salad becomes a whole meal in itself. For flavor variations, add 1/2 teaspoon dillweed or basil.

Antipasto Pasta Salad

Prepare pasta according to package directions. While pasta is cooking, combine pepper strips, artichoke hearts, cheese, mushrooms, onion and basil in a large bowl.

When pasta is done, drain and rinse with cold water. Drain well and add pasta and dressing to bowl; toss well. Cover; refrigerate at least 1 hour before serving.

Artichoke Pasta Salad

Cook macaroni according to package; drain well, rinse with cold water and drain again. Turn into a large bowl. Add artichokes and their liquid, mushrooms, cherry tomatoes, olives, parsley and basil; toss gently. Cover and refrig for at least 4 hours. Before serving, season with salt and pepper to taste.

Aussie Ham and pasta salad

Cook pasta in boiling water until tender, drain and rinse. cut ham into thin strips. Cut zucchini into thin strips, or grate. Cut artichoke hearts into quarters. Assemble salad in a medium bowl, mixing all ingredients gently together Combine dressing ingredients in a covered container, shake well. Pour dressing over salad.

Baja Chicken Pasta Salad

* The chicken breast should be boneless, skinless and weigh about 3/4
** You should use 1 6-oz package of diced mixed fruit. There should Heat enough salted water to cover the chicken breast (1/4 tsp salt to 1 cup of water) to boiling in a 4 quart Dutch oven. Add the chicken breast. Cover and heat to boiling, reduce the heat and simmer until the chicken is done, about 15 to 20 minutes. Remove the chicken with a slotted spoon. Heat the water to boiling and add the fruit and ring macaroni or orzo gradually so that the water continues to boil. Boil, uncovered, stirring occasionally, just until the ring macaroni is tender, about 6 to 8 minutes or 10 minutes for the orzo, then drain. Rinse with cold water and drain again. Cut the chicken into 1/2-inch pieces and mix with the fruit, macaroni, jicama and onions. Mix the remaining ingredients and toss with the chicken mixture. Cover and refrigerate until chilled, at least 2 hours.

Basil Tarragon Pasta Salad

Steam broccoli until tender crisp. Blanch in cold water and drain. In a two quart covered sauce pan, bring 1 quart of water to a vigorous boil under high heat. Blanch carrots and squash in boiling water for 30 seconds. Start timing when water returns to a boil. Immediately rinse in cold water and drain. Combine prepared vegetables, 3 tbs. parmesan cheese, and vinegarette in a large bowl. Toss gently to coat all pieces. Cover and refrigerate until chilled. About 1 hour. Uncover and toss occasionally while marinating in the refrigerator. Spoon salad into suitable serving dish. Garnish lightly with additional fresh grated parmesan cheese. Serve with fresh grated parmesan cheese available to top as individual taste dictates.
Makes 6 to 8 servings
** NOTE: Do not over cook the broccoli, carrots, or squash. Undercooking is preferred to overcooking. If it is necessary to prepare ahead, prepare vegetables and pasta, refrigerate in a covered bowl until about one hour before serving. Combine with marinade a per instructions.

Blt Pasta Salad

In large bowl, combine mayonnaise, chili sauce, lemon juice, bouillon and sugar; stir in macaroni, tomato and onions. Cover; chill. Just before serving, stir in lettuce and bacon. Refrigerate leftovers.

Bobbies Smoked Salmon Cucumber

Cook pasta in boiling salted water. Meanwhile, combine rest of salad ingredients in medium bowl, reserving a few flakes of salmon to use as garnish. In small bowl, combine dressing ingredients. Mix cooled pasta with rest of salad ingredients. Add dressing and toss lightly to mix. Garnish with reserved salmon flakes, tomatoes and parsley.
Chill. Remove from refrigerator 10 minutes before serving time.

Bowtie Pasta Primavera Salad

1. Bring a medium saucepan of water to boil over high heat. Add the asparagus and cook until tender, about 2 to 3 minutes. Drain and rinse under cold water.
2. Meanwhile, cook pasta according to package directions. Drain and rinse under cold water.
3. Make Lemony Dressing: Whisk together all ingredients in a large bowl.
4. Toss Lemony Dressing with pasta, asparagus, radishes, peas, green onion and parsley. Makes 4 servings.

This pasta salad can be enjoyed all year long with your favorite seasonal vegetables—green beans, carrots, tomatoes, or zucchini. For crisp veggies and peak flavor, toss this salad with the dressing just before serving.

Carole s Pasta Salad with Basil

Mince garlic in a food processor. Add 1 1/2T basil, sugar, mustard, lemon juice, 2t salt and 1t pepper. Process 10 seconds. With the machine running, drizzle in oil until slightly thickened. The vegetables and chicken will dilute the intense flavor of the dressing. Makes 1 3/4c.

Steam zucchini 1 minute and drain. Cool under running water. Cook pasta al dente, cool under running water, drain and dry.

In separate bowls, toss chicken, zucchini, pasta and tomatoes with 1/4 cup dressing each. Gently combine chicken, zucchini, pasta and green onions. Adjust seasonings and dressings to taste. Spoon salad onto a platter. Sprinkle tomatoes, olives and pine nuts on top. Pass cheese separately.

Chicken And Pasta Salad

1. Cook pasta according to directions, chill in ice water, drain. 2. Blanch broccoli in boiling water, chill in ice water, drain.
3. Use 1/2 soy sauce to season the chicken, heat oil in no stick pan, brown chicken, and reduce heat and finish cooking. Don't overcook!

4. Slice chicken into 1" strips, turn and cut into 1/4" pieces, place into bowl with other ingredients except dressing and soy sauce.

5. Mix remainder of soy sauce into dressing and pour over pasta, chicken, and vegetables. Toss gently and serve immediately.

You maight like to leave the pasta, chicken, broccoli un-chilled and serve it semi-warm.

Chicken Caesar Pasta

Saute chicken in 3 tbsp. Caesar dressing in a large skillet 4 to 5 minutes or until almost done. Add green onions, peas, and carrot; cook, stirring occasionally, 4 to 5 minutes or until crisp-tender. Add spinach; cook, stirring occasionally, 1 to 2 minutes or until wilted. Toss with pasta, and serve with remaining Caesar dressing. Yield 2 to 3 servings.

Chicken Pasta Salad

Cut chicken breasts in half and place in the slow cooker. Cover with water and add celery, onion, salt and peppercorns. Set on low and cook 5-6 hours. When chicken is cooked throughly, remove and let cool. Cut into chunks or shred. Cook dried pasta

Chicken Pasta Sald With Blueberries

Place green beans between paper towels and squeeeze until barely moist. Combine green beans and next 6 ingredients in a large bowl. Combine yogurt and next 4 ingredients in a bowl; stir well. Pour over chicken mixture, toss gently. Cover and chill 2 hours. Serve on a lettuce-lined serving plate.
