Baking Powder Biscuits (diabetic)

Mix flour, baking powder, and salt together. Cut in the shortening until it is evenly mixed with the dry ingredients. Then ADD, Milk, mixing well.
Then Knead for a a 1/2 minute and roll out to about 1-1/2 inch in thickness. Cut with a Biscuit cutter.
Place the biscuits 1-1/2 inches apart on a greased baking sheet. The BRUSH with the Milk and BAKE at 450F oven degrees 10-12 minutes One biscuit may be Exchanged for: 1 bread exchange or 1 fat exchange.

Baking Powder Biscuits (roberts)

COMBINE FLOUR, baking powder, salt and butter in a mixer and mix until crumbly. Add the buttermilk and mix until the dough holds together. Do not over-mix. Turn out on a floured surface and roll the dough out to a 3/4-inch thickness. Cut into rounds or squares.
Place fairly close together on an ungreased cookie sheet and bake in preheated 450F oven for 12 to 15 minutes.

Baking Powder Biscuits (wedman)

Combine the dry ingredients in a mixing bowl. Cut in the margarine with a fork or pastry blender. Add the milk. Stir to make a soft dough. Roll out on a lightly floured surface until 1/2 inch thick.
Cut into biscuit shapes. (Or divide dough in 12 balls, roll in your hands and pat lightly to flatten.) Place on an ungreased baking sheet. Bake at 425 F for 12 to 15 minutes or until lightly browned.

Basic Biscuits p Cooking Class

HEAT THE OVEN TO 450F.
Sift the flour with the baking powder, salt and baking soda. Cut in the vegetable shortening until mixture resembles bread crumbs. Stir in the buttermilk with a wooden spoon until just blended.
Turn the mixture onto a floured surface, and knead 10 times. Pat the dough into a rectangle 1/2-inch thick. Cut with a 3-inch cutter, and place biscuits close together on an ungreased cookie sheet. Bake in the center of the oven for 10 to 12 minutes, or until golden brown. Serve immediately. Makes about 20.
Biscuits can be made a day in advance and covered tightly in aluminum foil. Reheat in a 300F oven for 10 minutes.

Beaten Biscuits

Mix the flour, salt, sugar, and baking powder in a bowl or in a food processor fitted with a metal blade. Add the shortening and cut in or process until the mixture is the consistency of coarse meal. Pour in the milk and stir or process just until the dough holds together. If it is dry or crumbly, add more milk. If it is too wet, add more flour. Knead briefly in the food processor, then turn out onto a floured board or beat 1,001 times with a rolling pin. when it's ready, the dough should "snap" when you hit it. Fold the dough in half. Roll out the folded dough until it is 1/2 inch thick. Cut with a 1-1/4-inch biscuit cutter into small rounds. Prick each round with a fork, making two parallel sets of holes in the biscuit. keep rolling out the dough, folding before cutting, until all the scraps are gone and you have made about 100 biscuits. Preheat the oven to 350 degrees. Place the biscuits on a lightly greased pan. Bake for 30 minutes, until crisp, but not browned. They should open easily when split with a fork. They will keep for weeks tightly covered in a tin or in the freezer. Split in two before serving.

Beer Biscuits

Preheat Oven to 450 degrees F.
Sift dry ingredients together.
Cut in shortening until it has cornmeal consistanch.
Stir in beer, knead lightly, roll out to 1/2-inch thickness.
Bake 10 - 12 minutes or until golden brown.
Makes 12 to 15 biscuits.

Sift all dry ingredients. Cut shortening into flour till mixture ressembles coarse cornmeal. Store, well covered, in cool, dry place. Makes: 13 cups Use for pancakes, waffles, biscuits or anything that you would use packaged biscuit mix.

Biscuit Short Cake

Sift flour, measure, sift with salt, sugar, and baking-powder. Cut in shortening and 1 tablespoon butter with 2 spatulas. Add milk. Mix lightly. Turn onto lightly floured board. Knead gently. Pat in sheet 1/4 inch thick. Cut with floured cutter. Spread 1/2 the biscuits with butter. Place an unbuttered biscuit over a buttered biscuit. Place on baking sheet. Bake in hot oven (450 F) 15 minutes. Cool. Place crushed sweetened berries between two biscuits. Cover liberally with berries. Serve with or without whipped cream. 6 servings.

Biscuit Topped Italian Casserole

Heat oven to 375 degrees. Grease 12X8-inch (2-qt) baking dish. In large skillet, brown ground beef and onion; drain. Stir in water, pepper, tomato sauce and tomato paste; simmer for 15 minutes, stirring occasionally. Remove from heat; stir in vegetables and 1 1/2 cups of the cheese. Spoon mixture into greased baking dish. Seperate dough into 10 biscuits. Separate each biscuit into 2 layers. Place biscuits near oter edge of hot meat mixture, overlapping slightly. Sprinkle remaining cheese in center and around edge. Gently brush biscuits with margarine, sprinkle with oregano. Bake for 22-27 minutes or until biscuits are golden brown.

Biscuit Tortoni

1.Add the sugar to the softly beaten cream a little at a time.
Beat well to incorporate sugar.
Mix in the amaretto or wine and all but 1 tbs.
of the almonds.
Fold in the beaten egg white.
2.Using a pastry bag, pipe the cream mixture into biscuit cups or custard cups.
Sprinkle reserved ground almonds on top.
Freeze until firm, about 3 hours.
Remove from freezer about 15 minutes before serving to allow to soften slightly.

Preheat oven to 350 degrees F. In a big bowl mix the biscuit mix, onions, eggs, milk and about 1/2 cup of the cheese. Put the dough into a 9x13 inch baking pan and smooth it down. You will have to flour your hand or spatula to do this. Sprinkle the rest of the cheese over the top and then use the spatula or knife to score the dough into square biscuits. Cut all the way to the pan. Bake in a preheated oven at 350 degrees F. for 40 to 45 minutes. When they are done a wooden toothpick stuck into the dough will come out clean.
NOTES: * Some not-so-plain biscuits -- This recipe is from Bob Clover of Sausalito, California and was Yield: 24-30 biscuits.
* When you take them out of the oven, flip the pan upside down over a rack to get the biscuits out, then flip the rack over to get everything back right side up again.
* This is good if you are having a lot of company or want a lot of leftovers.: Time: 20 minutes preparation, 45 minutes cooking

Brigitte s Chicken and Biscuit Pie

1.Heat oven to 425F.
Saute onions and pepper in oil until tender.
Add undiluted soup, milk, chicken and vegetables.
Mix well.
2.Turn into a 9 inch pie plate.
Top with the biscuits and bake for about 15 minutes, or until the biscuits are golden brown and the chicken is bubbling.

Butter Dipped Biscuits

Heat the oven to 450 degrees F.
Heat the butter in a square pan 9 X 9 X 2-inches, in the oven until the butter is melted.
Mix the flour, sugar, baking powder and salt in a medium bowl.
Add the milk and stir with a fork just until a soft dough forms, about 30 strokes.
Turn the dough out onto a well-floured cloth-covered board.
Coat the dough lightly with flour.
Knead lightly about 10 times.
Roll or pat the dough into an 8-inch square.
With a floured butter knife, cut the dough into halves, then cut each half into 9 strips.
Dip each strip into the melted butter, coating both sides.
Arrange the strips close together in two rows in the pan.
Bake for 15 to 20 minutes or until golden brown.

Buttermilk Biscuit Sausage Pinwheels

With a pastry blender, cut shortening into flour. Add buttermilk and mix. On a lightly floured board, knead for a few seconds, adding additional flour if necessary. Roll out onto a lightly floured board into a 12"x9" rectangle. Spread sausage over dough. Roll up, jelly roll style, starting from the short side. Chill. Cut into 1/2" slices. Place cut side down on a lightly greased baking sheet. Bake at 425 degrees for 25 minutes or until lightly browned.

Cheddar Biscuits

Sift the flour, baking powder, and salt together and mix with the grated cheddar cheese. Cut the butter into the dry ingredients, add the milk and mix quickly but thoroughly. The dough should be soft. Turn onto a floured board and knead lightly for a few seconds. Pat to a 3/8-inch thickness and cut. Bake on a baking sheet in a hot-oven (450 degrees F.) about 30 minutes or until lightly browned. Serve hot.

Cheese And Sausage Biscuits

Bake biscuits as directed on can. Slice sausage into 10 pieces; fry and drain. Slice biscuits in half; place sausage patty inside. Wrap each in plastic wrap and place in freezer bag; freeze. To Heat: Remove plastic wrap; place 1 sandwich on paper towel or napkin in microwave. Microwave on defrost 1 minute. Place 2 cheese quarters, slightly overlapping, on top of sausage. Microwave on defrost for 1 to 1 1/4 minutes or until thoroughly heated. Makes 10 sandwiches.

Cheese Garlic Biscuits

1.Beat all ingredients together until smooth and completely combined not over 1 minute. Streak dough with 1/4 cup grated cheddar cheese.
2. Drop batter evenly among 10 paper lined muffin cups.
Drizzle the top of each with 1 tsp. melted margarine or butter, and dust each with a scant amount of garlic powder, plus 1 scant teaspoon of additional grated cheese.
3. Bake at 350F for 25-30 minutes or until golden brown and tripled in size. Cool in pan on rack for 30 minutes.

Chicken Crackling Biscuits

The yellow fat from a hen should be cut into small pieces and rendered over low heat until "cracklings" are golden crisp. Lift cracklings from liquid fat, cool, and refrigerate both until needed. Sift flour, measure and resift with baking powder and salt 3 times. Add cold chicken fat and cut in with a pastry blender or two knives. Add cracklings and stir only enough to distribute evenly. Add milk in 2 portions and mix in with a table fork. Do not stir. Dough should be soft but easy to handle. Knead very gently on lightly floured board and roll out to 1/2 inch thickness. Cut out with biscuit cutter and place on greased baking sheet. Bake 10 to 15 minutes in 450 F. oven or until biscuits are golden brown.
