A Bevy Of Bagel

In a small bowl, combine 1/2 cup of the warm water, sugar and yeast. Stir & let stand til foamy, abt. 10 min. In lge. bowl of elec. mixer, combine gluten flour, 2 cups all purpose flour, salt, and remaining 1 1/2 c.warm water. Add yeast mixture and beat for 5 min. on med. low speed. Cover dough and let it rise until it collapses, abt. 2 hrs.

Stir 2 more cups A.P. flour gradually into dough. Spread remaining flour on a working surface and turn dough out onto it. Knead until smooth and shiny.

Place dough in an ungreased bowl and let rise, covered, until doubled in bulk, 1 hr. or more. Punch dough down. Turn out onto board and cut into 12 pcs. Cover with dry towel, then damp one, and let rest 10 min.

Removing one pc. at a time from under towell, begin making the bagel shapes. Roll each pc. into a "snake" abt. 8" long. Moisten and over lap edges; pinch firmly together. The bagel should be a uniform ring with a center hole no smaller that 1 1/2". As each bagel is finished, place it on a dry towel. When all are formed and on the towel, place another dry towel, then a damp one, over them and let rise for abt. 30 min, or until "half-proofed", but not doubled.

While bagels are rising, preheat oven to 425 F. Make the water bath by combining water, sugar and salt in lge. pot and bring to simmer. When bagels are ready, drop abt. 3 at a time into the simmering water. Keeping the water at a bare simmer, cook bagels for 1 min. on each side. Remove with slotted spoon.

Place on baking sheet lined (not greased) with bakers' parchment. All should fit on pan--expect close fit. Bake in center of oven for 10 min.; the bagels should be set but not browned. Turn over and return to ovven for 5 min more, or until bagels are browned. Cool on rack. Store in plastic bag in 'fridge up to 2 days. If longer, freeze.

Apricot bagel

Place ingredients in the bread machine in the order listed. Use the dough setting. Add the apricots 5 minutes before the end of the kneading phase or work into the dough before shaping. If you don't have a dough setting stop the machine after the rises.

Prepare the baking sheets or use nonstick sheets.
Remove dough from the machine, punch it down, and roll it out into a rectangle about 14 x 18. Divide into equal pieces and shape into bagel form or use a cutter. Place the bagels on the sheets and let them rise again. I put them in the oven to provide a draft free location.

This rise can be anywhere from 20 minutes to 4 hours depending on what else is going on in your life.

Fill a 4 to 6 qt soup pot with water 3 to 4 " deep. You can add 2 T of malt syrup, honey, sugar or non-diastatic malt powder. Get the water to boiling.

Preheat the oven to 400.

Drop the bagels one at a time into the boiling water. Boil only 3 or 4 at a time so they don't crowd. Simmer each side for a minute and return to the baking sheet.

Add glazes or toppings as desired.

Bake just below the middle of a preheated 400 degree oven. The book calls for 20 to 25 minutes. I usually start at 15 minutes for the 1st sheet and less for the second.

These are best eaten while they are still warm. They can be frozen - you may want to slice them first so you can defost them in the toaster.

Bagels

Mix 1 1/2 cups flour, 3 Tbs sugar, 1 Tbs salt and yeast.

Heat 1 1/2 cups water and margarine to 120-130 degrees. Add to dry ingredients; beat 2 minutes at medium speed. Add 1/2 cup flour; beat at high speed 2 minutes. Stir in more flour to make a stiff dough. On floured board, knead 8-10 minutes. Set in greased bowl; turn to grease top. Cover; let rise in warm, draft-free place 1 hour.

Punch dough down. Cover; let rest 15 minutes. In a large skillet heat 1-inch water over medium low heat to a simmer; add remaining sugar and salt.

Divide dough into 12 pieces; shape 3 pieces into smooth balls. With floured finger, poke a 1-inch hole in each. Drop bagels into simmering water. Cook 3 minutes. Turn and cook 2 minutes. Turn again; cook 1 minute more. Drain on towels. Repeat shaping and cooking rest of dough.

Place on greased baking sheet. Mix egg white and 1 Tbs water; brush on bagels. Sprinkle with coarse salt, sesame, caraway or poppy seed if desired. Bake at 375 degrees for 20-25 minutes. Remove from sheets. Cool.

Bagels (Breadmaker)

Set for dough cycle.Let the machine knead the dough once, and then let the dough rise for only 20 minutes in the machine. Even if your cycle runs longer, simply remove dough after 20 minutes and turn off the machine. Divide the dough into the appropriate number of pieces. Each piece should be rolled into a rope and made into a circle, pressing the ends together. You may find it necessary to wet one end slightly to help seal the ends together. Place these on a well greased baking sheet, cover and let rise only 15 to 20 minutes. Meanwhile, bring to a slight boil in a "nonaluminum pan", (Donna German uses a cast iron frying pan) about 2 inches of water. Carefully lower about 3 or 4 bagels at a time into the water, cooking for about 30 seconds on each side. Remove bagels, drain on a towel, sprinkle with poppy seeds, sesame seeds or dried onion bits if desired and place on the greased baking sheet. Bake in a preheated 550 degree oven for 8 minutes.

Combine warm water, yeast and sugar. Let stand 5 minutes, stir in salt. Gradually mix in 4 cups of flour, beat at medium speed for 5 minutes. With spoon add 1 1/4 cups more flour to make a stiff dough. Turn out on a floured board and knead until smooth, elastic, and no longer sticky (about 15 minutes), adding more flour as needed. Dough should be firmer than for most yeast breads. Place in a greased bowl, cover, let rise until almost doubled (about 40 minutes). Knead dough lightly and divide into 12 equal pieces. To shape, knead each piece, forming it into a smooth ball. Holding ball with both hands, poke your thumbs through the center. With one thumb in hole, work around perimeter, shaping bagel like a doughnut 3 to 3 1/2 inches across. Place shaped bagels on lightly floured board, cover lightly and let stand in a warm place for 20 minutes. Bring the 3 quarts of water and 1 tbls sugar to boiling in large kettle. Adjust heat to keep it boiling gently. Lightly grease baking sheet and sprinkle with cornmeal. Heat oven to 400 degrees. Gently lift one bagel at a time and drop into water, boil about 4 at a time, turning often, for 5 minutes. Lift out with slotted spatula, drain briefly on a towel and place on baking sheet. Brush with glaze made with 1 egg yolk and 1 tbls water. Bake 35 - 40 minutes, or until well browned and crusty. Cool on rack.
WHOLE WHEAT BAGELS: Follow basic recipe, omitting sugar. Use 3 T honey instead. In place of flour, use 2 cups whole wheat flour, 1/2 cup wheat germ, and about 2 3/4 cup all purpose flour, blended together. Knead with white flour.
PUMPERNICKEL BAGELS: Follow basic recipe, omitting sugar. Use 3 T dark molasses in place of sugar. In place of flour use 2 cups rye, 2 cups whole wheat, 1 3/4 cups all purpose flour blended together. Knead with white flour.
ONION BAGELS: Add 1/2 cup instant toasted onion to basic dough with the yeast , water and sugar in basic recipe. SEEDED BAGELS: Springle boiled bagels with sesame seed, poppy seed, or caraway seed after using egg wash and before baking.

Bagels 2

* (Water which peeled potatos have cooked in. Plain water may be used, but it's not as good.) Sift together dry ingredients. Soften yeast in 1/3 of potato water. Add to flour. Add oil to remaining potato water and stir into the flour mixture. Add eggs and stir briskly to form a ball of dough. Knead on a lightly floured board for 10 minutes. (This MUST be a firm dough) Add more flour if necessary. Return to the bowl--smooth side up. Cover with a towel (tea etc) and let rise at room temperature until the dough rises to the top of the bowl. Knead again on a lightly floured board until smooth and elastic (as for rolls). Pinch off pieces of dough and roll between the palms of the hands to form ropes about 6 inches long and 3/4 inches wide. Pinch the ends together firmly to make a doughnut shape.
Add sugar to boiling water. Drop bagels into water one at a time. As they come to the surface, turn them over. Boil 1 minute longer on the second side. Place on a greased cookie sheet and bake at 450 F. until the crust is golden brown and crisp--10 to 15 minutes. Bagels may be sprinkled with poppy seed or sesame seed before baking if you like.

Bagels For The Bread Machine

Place ingredients into the bread case. Place the bread case into the bread machine. Select the Dough mode and press the start button.

When the buzzer sounds, press the STOP button and remove the bread case fro the bread machine. Remove the dough from the bread case and divide it into ~ 10 equal portions. Shape the dough into circles.

Arrange the circles on a greased cookie sheet and cover with a clean towel. Place the dough in a warm place and allow to rise for 40 to 50 minutes.

In a large saucepan bring 2 quarts of water to a medium boil. Carefully ad dough one at a time. Boil each bagel for about 2 minutes.

Remove bagels from boiling water and place on a greased cookie sheet. Bake 400 F until golden brown (about 20 minutes.)
Makes 8 to 10 bagels.

Bagels Sesame Garlic Or Plain

Eggless. A handsome bagel. Double the recipe if you expect company - they'll disappear fast. Omit the sesame and garlic for plain bagels.

Add remaining ingredients to sponge and knead dough well.

Let dough rise in an oiled bowl that's covered until double in size. Punch down and divide into 8 pieces. Start a large pan of water boiling. Some say honey helps the glaze. . . you may (opt) add 1/2 Tbs honey to the water. Shape into round rolls, then push thumbs through center and shape the hole.

Drop the bagels into boiling water right away after shaping them. Leave for about a minute - they'll puff up fast. Remove and put on oiled pan. Bake at 350 F for 20-25 min or at 400F for 10-15 min, until lightly browned.

Make dough let rise only twenty minutes in machine cut into 12 pieces. Roll into balls and using the thumb put hole in middle and turn to shape make sure you have a good opening dust with flour if you have to Place on greased cookie sheet and let rise 15 to 20 minutes. In a pan, put in about 2 inches of water and bring to a slight boil carefully lower 3 or 4 bagels at a time cooking 30 seconds on each side. Remove bagels and drain on towel sprinkle with poppy seeds, sesame seeds or onion bits if you want then place on greased cookie sheet and bake in a PREHEATED 550 oven 8 minutes. All so try rolling dough in to rectangles and roll up a hot dog in it and seal well with water. After they are cooled they can be frozen and will last 1 month to 6 weeks.

Bagels(Water Type)

Dissolve yeast in 1 cup warm water in large mixing bowl. Stir in sugar, salt, and 1 2/4 cups of flour. beat till smooth. Stir inremaining flour. Turn dough onto lightly floured surface; knead untilsmooth and elastic (about 10 minutes). Place in greased bowl; turn greased side up. turn over and let rise in warm place until double (about 15 minutes).
Dough is ready if an indentation remains when touched. Punch down dough; divide into 8 equal parts. Roll each part into a rope 6 inches long; moisten ends with water and pinch together to form a circle. Or, shape each part into a smooth ball; punch hole in center and roll gently to enlarge hole and make uniform shape. Let rise for 20 minutes
Heat oven to 375F. Heat 2 qts. water to boiling in large kettle. Reduce heat; add 4 bagels. Simmer for 7 minutes, turning once. Drain on kitchen towel. Repeat with remaining bagels, simmering four at a time. VARIATION: EGG BAGELS: Increase total amount of flour to 4 Cups. Knead for 5 minutes. Let rise until double (about 45 minutes). Divide dough into 16 equal parts; shape; and let rise as directed. Add 2 T sugar to boiling water. Simmer for 4 minutes, turning once. Beat 1 egg yolk and 1 T. water slightly; brush over simmering bagels. Bake as directed. Makes 16 bagels

Best Bagels Ever

Let yeast proof in water for 5 minutes, then mix in the honey, salt and flour.
Knead for 10 minutes until dough is happy
Rise, covered in oiled bowl for 15 minutes

Pat dough into rectangular slab 1 " thick and cut into strips. Join ends of strips together to form bagels. Let rise, covered, on oiled tray for 20 minutes

Preheat oven to 375 degrees and put a pot of water on to boil

After the 20 minute rise is done, drop bagels, one at a time, into boiling water. Take them out once they rise to the top of the water (Should be anywhere between 30 sec and 1 minute)

While still wet, sprinkle on toppings of choice (onion, garlic, sesame seeds, poppy seeds, and sea salt all at once is my favorite) Bake on tray with cornmeal to prevent sticking.

They will be done in around 25 minutes (varies) - when tops are golden brown. Can be made in 1 1/2 hours, start to finish. This recipie has been tried by friends who have never worked with yeast before with great success.

*** Presoak 1/4 cup dried onions in 1/3 cup warm water for 10 minutes. Drain and press water from onions. Place specified amount of pre-soaked onions in the machine with the rest of the ingredients. Save the rest to sprinkle on top of the bagels before baking.

Bread Machine Pumpkin Spice Bagels

1. Insert ingredients in bread machine according to manufacturer\'s instructions. Remove the dough from the machine after the first knead - approximately 20 to 30 minutes.

2. Place dough on a floured surface. Divide into 8 parts. Form balls, gently press thumb through center of ball and slowly stretch into bagel shape.

3. While bagels rise, bring three quarts of water and one tablespoon of sugar to a rapid boil in a large saucepan. Drop test dough (see hints below).

4. Using a slotted spoon, drop 2-3 bagels into rapidly boiling water. Boil on each side for 1/2 minutes. Remove and cool on rack 1 minute, brush with egg and sprinkle with sesame or poppy seeds, if desired.

5. Bake at 400 on a baking sheet sprinkled with cornmeal, until golden - approximately 15 minutes.


** Bagel Success Hints

** When forming the bagels, set aside two 1/4\" balls of dough. When the bagels have doubled in size, drop the test dough into boiling water. The dough should pop to the top right away. When this happens, it is time to boil the bagels.

** A quick spray of non-stick vegetable coating on the top of the bagel may be substituted for the egg wash.

** To make bagel sticks, cut bagel before rising and lay out in a straight line . Roll sticks in a combination of sesame and poppy seeds with a pinch of garlic powder. Let sticks rise, boil, and bake as described in the above directions.

** To make bagel chips, slice leftover bagels horizontally into thin slices. Bruish with butter or margarine on one side. Lay (butter side up) on an ungreased cookie sheet and bake at 325 for 12-15 minutes until golden brown and crisp.
