Butter Dipped Biscuits
Heat the oven to 450 degrees F.
Heat the butter in a square pan 9 X 9 X 2-inches, in the oven until the butter is melted.
Mix the flour, sugar, baking powder and salt in a medium bowl.
Add the milk and stir with a fork just until a soft dough forms, about 30 strokes.
Turn the dough out onto a well-floured cloth-covered board.
Coat the dough lightly with flour.
Knead lightly about 10 times.
Roll or pat the dough into an 8-inch square.
With a floured butter knife, cut the dough into halves, then cut each half into 9 strips.
Dip each strip into the melted butter, coating both sides.
Arrange the strips close together in two rows in the pan.
Bake for 15 to 20 minutes or until golden brown.

Buttermilk Biscuit Sausage Pinwheels
With a pastry blender, cut shortening into flour. Add buttermilk and mix. On a lightly floured board, knead for a few seconds, adding additional flour if necessary. Roll out onto a lightly floured board into a 12"x9" rectangle. Spread sausage over dough. Roll up, jelly roll style, starting from the short side. Chill. Cut into 1/2" slices. Place cut side down on a lightly greased baking sheet. Bake at 425 degrees for 25 minutes or until lightly browned.

Cheddar Biscuits
Sift the flour, baking powder, and salt together and mix with the grated cheddar cheese. Cut the butter into the dry ingredients, add the milk and mix quickly but thoroughly. The dough should be soft. Turn onto a floured board and knead lightly for a few seconds. Pat to a 3/8-inch thickness and cut. Bake on a baking sheet in a hot-oven (450 degrees F.) about 30 minutes or until lightly browned. Serve hot.

Cheese And Sausage Biscuits
Bake biscuits as directed on can. Slice sausage into 10 pieces; fry and drain. Slice biscuits in half; place sausage patty inside. Wrap each in plastic wrap and place in freezer bag; freeze. To Heat: Remove plastic wrap; place 1 sandwich on paper towel or napkin in microwave. Microwave on defrost 1 minute. Place 2 cheese quarters, slightly overlapping, on top of sausage. Microwave on defrost for 1 to 1 1/4 minutes or until thoroughly heated. Makes 10 sandwiches.

Cheese Biscuits
Prize winning recipe Sift flour, measure, and sift with baking powder and salt. Work in butter and cheese with 2 spatulas or tips of fingers. Add milk. Mix quickly and lightly. Drop by teaspoonfuls on well-oiled baking sheet. Bake in hot oven (450 F) 12 minutes.

Cheese Drop Biscuits
Sift flour, salt, baking powder together. Chop in butter. Add enough milk to make up soft.
Add cheese. Drop on buttered baking tin.
Note: No baking time or temperature is given. Suggest moderate 400 F oven, 10 - 20 minutes.

Cheese Garlic Biscuits
1.Beat all ingredients together until smooth and completely combined not over 1 minute. Streak dough with 1/4 cup grated cheddar cheese.
2. Drop batter evenly among 10 paper lined muffin cups.
Drizzle the top of each with 1 tsp. melted margarine or butter, and dust each with a scant amount of garlic powder, plus 1 scant teaspoon of additional grated cheese.
3. Bake at 350F for 25-30 minutes or until golden brown and tripled in size. Cool in pan on rack for 30 minutes.

Chicken Crackling Biscuits
The yellow fat from a hen should be cut into small pieces and rendered over low heat until "cracklings" are golden crisp. Lift cracklings from liquid fat, cool, and refrigerate both until needed. Sift flour, measure and resift with baking powder and salt 3 times. Add cold chicken fat and cut in with a pastry blender or two knives. Add cracklings and stir only enough to distribute evenly. Add milk in 2 portions and mix in with a table fork. Do not stir. Dough should be soft but easy to handle. Knead very gently on lightly floured board and roll out to 1/2 inch thickness. Cut out with biscuit cutter and place on greased baking sheet. Bake 10 to 15 minutes in 450 F. oven or until biscuits are golden brown.
