Breadfruit Donuts
Combine the beaten egg, breadfruit pulp, and shortening. Mix well. Add sifted dry ingredients. Stir in egg mixture. Drop by spoonfuls into preheated deep fat (370 F) and fry until golden brown. Drain on paper towels or a brown bag. Shake in a bag with sugar to coat outside. Makes about 1 1/2 dozen donuts.

Butter Pecan Crust
Blend together butter, flour and sugar until the mixture is crumbly. Stir in pecans. Press the mixture into a 9 inch pie plate and bake at 375F for 12 to 15 minutes. "Extravagant but delicious. Try this with other nuts - almonds, brasils, walnuts - chopped with a knife."

Butterhorns
Soften yeast in warm water with 1 tbs of sugar. Set aside. In another large bowl combine milk, shortening, sugar, and salt. Cool to lukewarm then add yeast mixture and mix well. Add eggs. Measure in flour 1 cup at a time, mixing well until dough is smooth, soft and elastic, and no longer sticky. Knead lightly on floured surface. Form into ball. Place in warm bowl, cover and let rise in a warm, draft free place until doubled; about 2 to 2-1/2 hours with regular yeast. Punch down, knead lightly and divide into thirds. Roll each third into a 12 inch circle. Brush with melted butter. Cut into 12 pie-shaped wedges and roll (starting at wide end ending at the point) each wedge into a crescent. Brush each crescent with melted butter. Place on greased baking sheet and let rise until very light (about an hour). Bake at about 375 degrees for about 12 minutes or until light golden brown. Experiment with your oven, as the temperature can vary between 350 and 400 degrees. If the rolls burn on the bottom before turning light brown, the oven is too hot.

Calas
Mash rice grains, and cool to lukewarm. Dissolve yeast in warm water, and stir into rice. Cover, and let rise overnight in a warm place (85 deg), free from drafts. Add eggs, flour, sugar, salt, and nutmeg to rice mixture, beating until smooth. Cover and let stand in a warm place (85 deg) for 30 minutes. Heat 3 inches of oil to 360 deg; drop dough by tablespoonfuls into hot oil. Cook about 3 minutes or until golden brown. Drain; sprinkle with powdered sugar. Serve immediately. Yield 2 1/2 dozen.

Caramel Chocolate Eclairs
With a small paring knife, pierce a small hole at each end of each eclair. Put pastry cream in pastry bag fitted with small plain tip. Insert tip into one hole in one eclair and squeeze to fill. Place tip in other hole and repeat. Repeat with each eclair until all are filled. Use a small offset spatula to glaze each eclair with chocolate ganache. Let ganache set before serving. Yield: 12 servings
