Brigitte's Hamburger Stroganoff

1.Saute onion in margarine until golden.
Stir in meat, garlic, flour, paprika, salt and pepper, and mushrooms; saute 5 minutes.
2.Add soup (undiluted); simmer uncovered 10 minutes.
Stir in sour cream or buttermilk and sprinkle with parsley.
Serve over rice, noodles or toast.

Brigittes Tuna Burgers

Cook bacon; beat egg; add tuna, mustard, mayonnaisse, onion, bread crumbs, and mix well.
Spoon onto bottom halves of buns.
Broil 6" away from the heat till brown; about 6 minutes.
Top each with a tomato slice and two pieces of bacon.
Cover with top of buns which you have toasted lightly before

Bulghur Burgers

In a large pot, heat the water to a boil.
Add the bulghur, reduce heat, and cook for 20 minutes, until the bulghur is soft anf the water is absorbed.
Set aside.
Preheat oven to 350.
Heat the oil in a large skillet, over medium-high heat; add the onions and saute for 3 minutes.
Add the beets, carrots and cabbage, and saute for 7 minutes more.
Add the seasonings.
Remove from heat and combine with the bulghur.
Shape the batter into burgers to fit buns.
Place on oiled cookie sheet, and bake for 20 minutes; turn over and bake for 29 minutes more.
Makes 1 1/2 to 2 dozen.

Bun Less Super Bowl Burger

Make 4 rounded burgers.
Peel and slice onions.
Melt margarine or butter in skillet and add onions,frying and stirring for about 5 minutes.
Remove then.
Put burgers into skillet and brown on all sides over medium heat for approximately 10 minutes.
Turn down heat and add cooked onions,salt and pepper.
Serve smothered with onions.
(Recommend meal served with 12 ounces of selected barley,malt,rice, hops and water.)

Burgundy Burgers

Mix all the ingredients together.
Shape mixture into 6 patties, each about 3/4-inch thick.
Broil or grill the patties 4-inches from the heat, turning once, to the desired doneness, about 10 to 15 minutes.
Nice served on toasted buns with a favorite topping.

California Cheeseburger Pie

Heat oven to 400 degrees.
Grease pie plate,10 x 1 1/2".
Cook and stir beef and onion in 10" skillet until beef is brown;drain.
Stir in salt and pepper;spread in plate.
Beat baking mix,milk and eggs with wire whisk or hand beater until almost smooth,about 1 minute.
Pour into plate.
Bake 25 minutes.
Top with tomatoes and cheese.
Bake until knife inserted in center comes our clean,5 to 8 minutes.
Cool 5 minutes.
Top with lettuce and pickles.
Makes 6 to 8 servings.

Caraway Burgers

Mix all the ingredients together except the beer.
Shape mixture into 6 patties, each about 1-inch thick.
Place the patties in an ungreased baking dish, 10 X 6 X 1 3/4-inches.
Pour the beer over the patties, then cover and refrigerate at least 3 hours.
(Meat may turn gray, but is ok) Remove patties from the marinade.
Broil or grill the patties 4 inches from the heat, turning once, to the desired doneness, about 15 to 20 minutes.

Carrot Burgers

Place the carrots in a medium-sized saucepan containing 3 or 4 inches of water; steam over medium heat for 15 minutes, till soft.
Drain and mash well using a potato masher.
In a large skillet, heat the oil over medium heat; add the diced garlic, onions, celery, and peppers; saute for 7 minutes.
Add the tamari, basil, garlic powder, parsely, and oregano; saute for 2 minutes more, until vegetables are soft.
In a large bowl, combine the carrots, sauteed vegetables, tahini and peanut butter.
Season to taste.
If the batter is too wet, add the wheat germ to make it hold together.
Preheat oven to 350.
Form the mixture into patties, and place on an oiled cookie sheet.
Bake for 10 to 12 minutes, until golden on top.
Turn and bake on the other side until golden brown.

Cheddar Burgers

Combine first 6 ingredients.
Form into 5 patties.
Grill or broil to desired degree of doneness.
Serve in sandwich buns;top with additional Heinz 57 Sauce,if desired.

Cheese Stuffed Lamburger

Mix the cheese, pickle relish, onion, green pepper and mustard.
Shape lamb into 8 THIN patties about 4 inches in diameter.
Spoon cheese mixture onto the center of four of the patties.
Top each with another pattie, pressing edges to seal filling inside.
Serve on toasted bun with lettuce leaf and sliced tomato.
For variation, substitute dill pickle relish and Monterey Jack or Swiss cheese for the sweet relish and cheddar.

Cheeseburger Pie

Heat the oven to 375 degrees F.
Mix the 1 cup of the biscuit baking mix and the milk until a soft dough forms.
Gently smooth the dough into a ball on a floured cloth-covered surface after kneading the ball 5 times to mix.
Roll out the dough until it is 2 inches larger than an inverted 9-inch pie pan.
Ease into the pan and flute the edges.
Set aside.
Cook and stir the meat and onion in a large skillet until the meat is brown.
Drain off the excess fat.
Stir in the salt, pepper, 2 Tb of the baking mix, and the worcestershire sauce.
Turn the meat filling into the pastry lined pie pan.
Arrange the tomato slices on the meat mixture.
Beat the eggs slightly and stir in the cheese.
Spoon onto the tomatoes spreading the mixture to cover the top completely.
Bake for about 30 minutes.
Cut into wedges and serve with chili sauce, if desired.

Cheeseburger Pizza

Pat biscuits into a 12" round greased baking sheet or pizza pan.
Bake @ 400 degrees for 10 minutes.
Meanwhile,cook and stir beef and onion in a skillet until beef is browned and onion is tender.
Drain off fat.
Stir in soup, mustard and hot pepper sauce.
heat through.
Spread beef mixture over biscuits to within 1/2" of the edge.
Top with remaining ingredients.
Bake 5 minutes more or until biscuits are golden brown.
Garnish with sliced pitted ripe olives and dill pickle chips,if desired.
Cut into wedges and serve.
Makes 6 servings.

Chili Cheese Burgers

* Each cheese slice should be 2 X 2-inches.
Mix all the ingredients together except the cheese slices and chiles.
Shape the mixture into 12 thin patties, each about 3 1/2-inches in diameter.
Place 1 cheese slice and 1 tsp of the chiles on each of 6 patties.
Top with the remaining 6 patties sealing the edges firmly.
Broil or grill the patties 4-inches from the heat, turning once, until the desired doneness is reached, about 10 to 15 minutes.

Chiliburger Pies

Mix ground beef, corn, chilies and chili powder.
Shape mixture into 6 patties.
Place on rack in broiler pan.
Set oven control to broil.
Broil with tops 3 to 4 inches from heat 4 minutes on each side.
Heat oven to 400 degrees.
Mix remaining ingredients until soft dough forms.
Beat vigorously 20 strokes.
Smooth dough gently into ball on surface dusted with baking mix.
Knead 5 times.
Roll 1/8-inch thick.
Cut into 12 rounds with floured 4-1/2-inch biscuit cutter.
Place beef patties on 6 of the rounds.
Top each with another round.
Pinch edges together to seal.
Place on ungreased cookie sheet.
Bake about 15 minutes or until golden brown.
6 SERVINGS; 540 CALORIES PER SERVING.

All In One Tuna Casserole

* Frozen Peas & Carrots should be thawed.
* Egg Noodles should be cooked and drained.
* Cheese should equal 1/2 C Preheat oven to 350 degrees F.
In large bowl, blend golden onion recipe soup mix with milk; stir in peas & carrots, cooked noodles and tuna.
Turn into greased 2-quart oblong baking dish, then top with cheese.
Bake 20 minutes or until bubbling.

Apple and Sweet Potato Casserole With Leek Country Living H

1.Heat oven to 350'F.
Peel and thinly slice sweet potato.
Peel, core, and cut apples into 1/4-inch-thick slices.
Place apples in bowl and add water to cover; add lemon Juice.
2.Trim off top of leek 1 inch above white; discard top and root end.
Cut leek lengthwise in half and clean well under running cold water.
Thlnly slice leek crosswise.
3.Drain apples well; pat dry.
Grease 1 1/2-quart casserole with 1 table- spoon butter.
Place one third of apples in bottom of casserole; top with one third of leek slices and one third of sweet potato.
Season with salt and pepper.
Repeat to make 2 more layers.
Dot top of casserole with 2 tablespoons butter; pour apple juice over all.
Cover tightly with lid or aluminum foil and bake 45 minutes.
4.Meanwhile, to make topping, in small saucepan, melt remaining 1 ta- blespoon butter; stir in bread crumbs and brown sugar until well combined.
Uncover casserole and sprinkle with topping.
Bake uncovered 10 to 15 minutes longer or until potato slices are tender.
Serve casserole immediately.

Armenian Eggplant Casserole

Pare and dice eggplant.
Heat oil in skillet, add onion, green pepper, and eggplant.
Stir over low heat until eggplant is soft.
Add tomatoes(may substitute canned Italian solid pear shape, drained), salt, and pepper.
Simmer a few minutes.
At this point you can add basil, chives, parsley, tarragon or oregano to taste.
Turn into casserole dish and bake at 325 degrees for 40 minutes.
Casserole may be served hot or cold, with sour cream.

Arroz Con Pollo Chicken And Rice Casserole

Servings: 4 Preheat the oven to 375.
season the chicken with salt, pepper, cumin and oregano.
Heat the oil in a skillet over medium-high heat.
Add the chicken pieces and brown on all sides.
Remove the pieces to a baking dish and set aside, keeping them warm.
Add the onion, garlic, green pepper and ham to the skillet.
Saute until vegetables are wilted.
Add the crushed tomatoes, tomato cubes, saffron, bay leaf and broth.
Bring to a boil while scraping the bottom to loosen any sticking particles.
Add the rice, capers, olives and chicken.
Stir, cover tightly and put in the oven.
Bake 20 minutes.
Stir in the peas and the cheese.
Arrange the strips of pimento on top and bake 5 minutes more.
Remove and discard the bay leaf and serve sprinkled with coriander.
Serves4.

Artichoke Chicken Casserole

In a skillet over medium-high heat, heat 2 tablespoons butter.
Add the mushrooms and cook until lightly browned.
Spread the mushrooms and the artichoke hearts in a greased 9-by-13 inch pan.
In a skillet over medium-high heat, melt 4 tablespoons butter.
Dredge the chicken with seasoned flour.
Add the chicken to the pan and lightly brown it (this may have to be done in batches).
Layer the chicken over the vegetables.
Set aside.
In a saucepan over medium heat, melt 9 tablespoons butter.
Slowly add the 9 tablespoons flour and stir to make a smooth paste.
Stirring, slowly add the half-and-half.
Continue stirring and cooking until mixture is smooth.
Add Worcestershire sauce, salt and pepper.
Continue Cooking until sauce thickens.
Blend in the sherry and half the cheese; cook until cheese melts.
Pour this mixture over the chicken.
Top with remaining cheese and sprinkle with paprika.
Bake in a 375?F oven for 40 minutes.
* NOTE: Make seasoned flour by combining flour with salt and pepper to taste.
Yield: 8 servings.
Per serving: 712 calories, 55 grams protein, 41 grams fat, 31 grams carbohydrate, 222 milligrams cholesterol, 502 milligrams sodium.
