Shepherdless Pie

Put the lentils, barley, carrots, onion, tomatoes and their juice and stock into a saucepan.
Bring them to the boil, cover the pan, and simmer for 40 minutes or until the lentils and barley are soft.
Boil the potatoes in their skins.
Peel them as soon as they are cool enough to handle and mash them with the milk and the cheese.
Preheat the oven to Gas Mark 6 or 200~C/400~F.
Put the lentil mixture into a 900ml (1 1/2 pint) pie dish.
Pile the potatoes on top in an even layer.
Make patterns on them with a fork.
Put the pie into the oven for 20 minutes or until the ridges on top begin to brown.
(Note: you can use low-fat Cheddar for this instead of full-fat variety)

All Saints Leek and Potato Hereford Pie

1. Preheat the oven to 350F (180C/Gas 4). Melt a third of the butter in a large frying pan and cook the leeks for 6 to 8 minutes until softened, stirring occasionally. Add the cider, bring to the boil and boil fiercely, uncovered, until reduced by about two thirds. Add the cream, bring back to the boil and boil fiercely for 3-5 minutes until the sauce has reached the consistency of thick cream. Remove from the heat and stir in the mustard, eggs and cheese.

2. Meanwhile, cook the potatoes (no need to peel) in boiling water for 3 to 4 minutes until tender. Be sure that they are cooked as the acidity from the cider will prevent them cooking further when added to the sauce. Drain and mix gently with the leek mixture. Season.

3. Melt the remaining butter. Use a little to brush the base of a (12x9-inch) 30 x 22cm baking dish. Place a sheet of filo pastry on top and brush with a little more butter. Repeat with 4 more sheets of pastry to cover the base and sides of the dish, overlapping the edges. Spread the filling inside, then layer another 5 sheets of pastry, in the same way as before, over the top. Fold over any overlapping pastry. Brush two more sheets with the remaining butter, gently scrunch, and place on top of the pie. Bake for 30-40 minutes until golden.

VARIATION: With just a few lowfat choices we can reduce this recipe to 260 cals and 5g fat per serving. Omit the butter. Softened leeks in broth and/or vegetable oil spray. Use whole or 2-percent milk. Substitute 1/3 cup liquid egg product. Use lowfat Cheddar cheese, Brush phyllo / filo with skim milk or a vegetable broth instead of butter and crimp.

Almond Quiche

1. Saute onion in butter until tender. In small bowl, beat together the eggs, both milks, flour and pepper until lightly frothy. 2. Stir in the cooked onion , cheese and toasted sliced almonds until well mixed. 3. Pour the mixture into a still hot baked pie shell. Bake at 325F for about 45 minutes. 4. When don e, a knife inserted in the middle will come out clean. Let stand for 10 minutes , slice and serve.

Alsatian Onion Pie

Saute onions in oil (I added 1/2 cup water to prevent burning, or you could substitute water for the oil to reduce fat), until translucent and mostly soft. Blend the soy milk, tofu, salt, pepper, nutmeg, and flour until smooth. Then combine the onions, the soy milk mixture and the couscous. Pour into the prepared pie shell. Bake in a preheated oven at 350 degrees F for about 30 minutes.

Annes Crustless Quiche

Preheat oven to 375 degrees. Combine all the ingredients and turn mixture into an 8 x 8 inch pan greased with reserved marinade. Bake 40 to 45 minutes. Cool in pan and cut into small squares. Reheat at 325 degrees for 10 to 12 minutes, if desired.

Anytime Quiche

Preheat oven to 350 degrees. Beat eggs in a bowl. Add other ingredients. Stir.
Pour into pie shells. Bake about 25 to 30 minutes until crust is golden brown.

90 Minute Dinner Rolls

1.Mix 3/4 cup of the flour, sugar, salt, and undissolved yeast.
2.Heat milk, water and margarine to 120-130 F.
(I use my temp.
probe of my microwave for this.
It works great!)
3.Gradually add milk mixture to dry mixture and beat 2 min.
at medium speed of mixer.
Add 1/4 cup flour.
Beat at high speed 2 minutes.
Stir in enough additional flour to make soft dough.
4.On floured board knead 2 to 3 minutes.
(I use dough hook on mixer.
Works very well)
5.Divide dough into 8-12 equal pieces.
Shape into balls.
Place in an 8-inch round pan.
6.Pour a 1-inch depth of boiling water into large pan on bottom rack of cold oven.
Set rolls on rack above water.
Cover.
Close oven door; let rise 30 minutes .
7.Remove the cover! Remove pan of water! 8.
Turn oven on to 375 F.
Bake 20-25 minutes or til rolls are light golden in color.
Remove from pan to cool.
Serve Warm.

A boiled Dinner

Brown spareribs in frying pan without added fat.
Add water and simmer for 1 hour.
Add potatoes to meat and cook until tender - about 25 minutes.
Add beans and liquid the last 10 minutes of cooking.
If raw beans are used, add with the potatoes.
Season with salt and pepper.
Skim off excess fat before serving.
To complete the meal: Serve with crisp lettuce, tomato and celery salad, and apple betty with lemon sauce for dessert.
For variety: Beef short ribs may be used with longer cooking.
Corned beef, ham hock, or ham bone may be used in place of shortribs.
Cover with water and simmer about 3 hours or until tender.
Omit salt, and continue as above.
Good with sauerkraut.

After Dinner Mint Cookies

Melt 5 oz of the Mint Wafers in a double boiler, stirring constantly or microwave on medium for about 3 minutes.
Set aside.
Cream butter with sugar, egg and salt.
Mix in melted chocolate.
Gradually add flour.
Chill dough at least 1 hour.
Shape dough into balls, using 1 level Tbsp for each cookie.
Roll balls into nuts.
Place on greased baking sheets.
Flatten slightly with the palm of hand.
Bake at 350-F for only 8 minutes.
Remove from oven and place Mint Wafer on top of each cookie, pressing slightly.
Continue baking 3 to 5 minutes longer or until cookie is firm.

Baked Pork Carrot Dinner

1.Arrange carrots in the bottom of a buttered 13x9-inch baking dish.
2.Combine flour, salt, pepper and thyme; dredge chops in seasoned flour.
3.Brown chops in oil; arrange in baking dish over carrots.
4.Top chops with onion slices; pour water over all.
5.Cover tightly with foil; bake in preheated 350'F.
oven 40 to 50 minutes, until meat and carrots are done.

Beef & Vegetable Skillet Dinner

* Boneless Sirloin Steak should be cut into thin stir fry strips.
** Use one of the following Lipton's Recipe Soup Mixes: Beefy Mushroom
In a large skillet, heat oil and brown beef, in two batches, over medium-high heat.
Remove beef.
Add carrots, then beefy mushroom recipe soup mix blended with water, soy sauce, ketchup, garlic powder and ginger.
Bring to a boil, then simmer, stirring occasionally, 5 minutes or until carrots are crisp-tender.
Add beef, bamboo shoots and snow peas, simmer 3 minutes or until heated through.
To serve, arrange beef mixture over hot rice.

Aunt Lucille Wanderers Tamale Pie

Tamale Pie Stir ingredients together in the order given above. Pour into large casserole dish or 9" x 13" pan. Bake uncovered at 350 degrees for approximately 1 hour or until solid, dry and golden brown.

Sauce Blend ingredients together with a wire wisk.

Serve with sauce over top of individual servings.

OPTIONS Can be cooked in a microwave on high for approximately 20 minutes. One half of mixed Tamale Pie ingredients may be frozen for baking at a later date.

Baby Vidalia Onion Pie

Saute onions in butter. Combine eggs and sour cream.
Add to onion mixture. Season mixture and pour in pastry shell. Top with cheese. Bake at 450~ for 20 minutes, then at 325~ for 20 minutes or until cheese melts.

Bacon and Potato Pie

Preheat oven 350 F. Grease 9x13" glass baking dish. Microwave bacon, remove. Add onion to bacon fat, microwave; remove. Combine eggs, potatoes, cheese, and pepper. Crumble bacon and mix into egg mixture. Add onions. Pour into prepared baking dish. Bake until center is set, 45 mins. Cut into squares.

Bacon Onion Pie

Melt 5 Tbsp butter and combine with bread crumbs in a pie plate. Press into a crust and refrigerate 30 minutes.

Cook bacon until crisp. Saute onion in 3 Tbsp butter until golden. Crumble bacon and layer bacon and onion in crust. Combine milk and eggs and pour over bacon and onion. Top with cheese. Bake at 350 degrees for 25 minutes.

Bacon Potato Pie

Cut the bacon slices into square pieces. Fry the pieces until well-cooked, then drain on paper towels.

Peel the potatoes, then grate them. To prevent the grated potatoes from discoloring while you prepare the other ingredients, you can put them into a bowl of cold water. When you're ready to use them, be sure to drain well and squeeze them dry.
Grate the cheese. Mince the onion. Butter a 9x13 inch shallow baking dish. Preheat the oven to 350 degrees F.

Beat the eggs in a large bowl. Add all the other ingredients and stir. Pour the mixture into the baking dish and bake in the preheated oven for about 45 minutes, or until the eggs are cooked. Serve hot, warm or at room temperature.

Baked Tuna Pie

Heat oven to 350 F. Combine flour, corn meal and 1/4 teaspoon salt.
Cut in shortening until mixture resembles coarse crumbs. Add water, 1 tablespoon at a time, stirring lightly with fork until mixture forms a ball. On lightly floured surface, roll out pastry to form 12-inch circle. Fit loosely into 9-inch glass pie plate; trim. Turn edges under; flute.
Place broccoli between layers of paper towels. Pat gently to absorb excess water. Combine broccoli, remaining 1/2 teaspoon salt and remaining ingredients; mix well. Pour mixture into pastry shell. Bake 50 to 55 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving. Serve with lemon wedges, if desired.

Batter Up Beef Pie

Combine beef,onions,carrots,potatoes and gravy.Set aside.Melt in bottom of 8" square baking dish in 350 degree oven.Combine remaining ingredients in mixing bowl.Stir until blended.Pour in baking dish. Pour beef mixture over batter.DO NOT STIR.Bake 1 hour and serve.

Bean Cheese Pie

Preheat oven at 375. Prepare pie plate, 10 x 1" with cooking spray and flour. Mix flour, 1/2 cup cheese, baking powder and salt in medium bowl. Stir in milk and egg white until blended. Spread over bottom and up side of pie plate. Mix remaining ingredients except 1/2 cup cheese. Spoon into pie plate; sprinkle with 1/2 cup cheese. Bake uncovered about 25 minutes or until edge is puffy and light brown. Let stand 10 minutes before cutting.

Bean Cornmeal Pie

Saute onions & pepper in a little vegetable stock & water till tender (about 8 mins). Add tomatoes, beans, salsa & corn. Add the spices and simmer while you get the topping ready.
{Original recipe called for 3 or 4 tablespoons of oil and 1 whole egg in the batter. I increased the milk slightly, added about 1/2 more teaspoon of baking powder and used just the egg white}

Sift together dry ingredients. Beat egg white & milk.
Stir into flour & cornmeal mixture - don't overmix.
Fold in the corn kernels, and spread batter over bean mixture and bake at 375 degrees for 25 minutes.

I serve this with plain yogurt {reduced fat, can't get fatfree around my neck of the woods} & extra salsa on the side.
