Simmer all the ingredients until the fruit is tender. Put the chutney in sterile jars and seal. May add 1 cup chopped onions and 1 cup chopped nuts if desired. Makes about 1 1/2 quarts.

3/4 cup fresh ginger

2 cups cider vinegar
2 chopped red peppers seeds and membranes removed
