Core and dice apples in 1/4 inch pieces. Toss immediately with lime juice. Stir in remaining ingredients. Chill 2 hours before serving. Good with pork, chicken, turkey and fish. Makes 3 cups.

1/2 c Onion , finely chopped
1/2 c Green pepper , finely chopped
1 Jalapeno pepper , fine chop
1 Clove garlic , minced
2 tb Cilantro , chopped
1 tb Cider vinegar
1/2 ts Ground cumin
1 t Vegetable oil
