Peel apples. Put flour, 3 T. of the sugar and cinnamon in a bowl. Cut butter into flour mixture until it resembles fine bread crumbs. Add egg yolks and ice water and mix until thee dough almost forms a ball. Press on the bottom and up the sides of a 10-inch tart pan. Chill 30 minutes. Pastry dough may also be prepared in a food processor. Sprinkle cheese and nuts over bottom of pastry shell. Arrange apple slices over this mixture. Sprinkle with lemon peel and remaining 4 T. of sugar. Bake in preheated 400 deg. oven and bake for another 20 to 25 minutes. Serve warm with slices of Tillamook or Cheddar cheese. Serves 6.
